SWEET CORN SALAD 

Ingredients to be needed – 1. Corn kernels 2. Onions 3. Cucumber 4. Coriander 5. Red chilli powder 6. Roasted cumin powder 7. Lemon juice 8. Cashews/peanuts 9. Salt, pepper and chaat masala METHOD – 1. Add the boiled corn kernels in a mixing bowl. 2. Add ¼ cup finely chopped onion, 1/3 to ½ cup finely chopped cucumber, 1 tsp chopped coriander and chopped cashews/peanuts. 3. Sprinkle ¼ tsp red chilli powder, roasted cumin powder, salt, pepper and chaat masala. 4. Now add ½ to 1 tsp lemon juice. 5. Mix and toss everything well. 

ORIGIN OF SWEET CORN Sweet corn was first grown by the American-Indian and first collected by the European settlers in the 1770’s. The first variety, Papoon, was acquired from the Iroquois – Indians in 1779. 

NUTRITIVE VALUE OF SWEET CORN Corn is a starchy vegetable and cereal grain that has been eaten all over the world over the world over centuries. It’s rich in fibres, carbohydrates, vitamins and minerals. However, the health benefits of corn are controversial- while it contains beneficial nutrients, it can also spike blood sugar levels. In addition, the crop is often genetically modified. 

HEALING PROPERTIES OF SWEET CORN, CORIANDER AND LEMONS Corn has several health benefits. Because of the high fibre contents, it can aid with digestion. It also contains valuable B vitamins, which are important for our overall health. Coriander helps lower blood sugar, it riches in immune-boosting antioxidants, it benefits heart health and promotes digestion and gut health. Lemons support heart health, they control weight, prevent kidney stones, protect against anemia and reduce cancer risk. 

INTERESTING FACTS ABOUT SWEET CORN 1. The tallest sweet corn plant on Record measured 10.74 m ( 35 ft. 3 inches ). That’s nearly 3 floors high. It was grown by Jason Karl in Costa Rica in 2011. 2. Sweet corn leaves were once used as chewing gum by the Native Americans. 3. An ear of corn always contains an even number of rows. 4. Some people believe that yellow corn is sweeter than white, but that’s not the case. Yellow corn is, however, slightly better for our health than the white corn, as the yellow coloration comes from beta carotene that our bodies convert to vitamin A.
