Chatpati Shakarkandi 

This is a popular street food of India, and an addictive evening snack, that is the perfect blend of spicy, sweet and sour! Crispy wedges sauteed in ghee and then tossed in spices and tamarind chutney, that gets everyone smacking their lips. This Delhi style dish brings everyone together on Sunday evenings, from six year olds to dadajis and dadijis. Here's my version of the recipe, hope you savour it as much as I do! 

Prep time: 10 mins Cook time: 15 mins 

(Ingredients): 2 large sweet potatoes Salt – to taste Roasted cumin powder – 1 tsp Onion Chopped – 2 tbsp Mint and coriander Chutney – 2 tbsp Lemon Juice – 1 tbs Oil – Tamarind Chutney- 1 tbsp Chilli powder – 1/2 tsp Chaat masala – 1 tbsp Curd – 4 tbsp Pomegranate seeds – 1/2 cup For the garnish: Chopped Red and Yellow Bell Peppers - 2-3 tbsp Chopped Corrainder Leaves - handful Non spicy bhujia- handful For the sauces: For the Hung Curd: 2½ cup curd/ yogurt For Green Chutney: 1 cup coriander leaves ½ cup mint leaves / pudina 3 inch ginger 2 tbsp roasted gram dal / putani 3 green chilli ½ tsp cumin powder / jeera powder 1 tsp chaat masala ½ tsp sugar ½ tsp salt pinch of hing / asafoetida ½ cup water 1 tbsp lemon juice For Queso Sauce( optional): Olive Oil - 2 tsp Chilli Flakes to taste Garlic Paste- 1/2 tsp Spring Onions - 1/4 cup Tomatoes - 1/2 cup Salt to taste 4 Cheese Slices Milk - 1/4 cup 

Method: Wash and clean the potatoes. Boil them in a cooker for 5-7 minute. Allow it to cool.Peel and cut them into large chunks. Heat oil and deep fry them till they turn crisp on the outside and soft & cook from the inside. Remove the hot potatoes into a bowl and mix well with all the remaining ingredients For the sauces: For Hung Curd: Hang the curd for approximately 1 to 2 hours and then transfer into a muslin cloth Transfer hung curd in a cone shaped packet. For Green Chutney: Firstly, in a blender take 1 cup coriander leaves and ½ cup mint leaves. Also add 3 inch ginger and 3 green chilli Additionally add 2 tbsp roasted gram dal, ½ tsp cumin powder, 1 tsp chaat masala, ½ tsp sugar, ½ tsp salt and pinch of hing. Blend smooth adding ½ cup water. Transfer to a cup and mix 1 tbsp lemon juice. Top the Chatpati shakarkandi with the three sauces and add the corrainder, chopped red bell peppers, lemon juice and diced onions to garnish READYYY!
